Ingredients
• 3/4 cup plaìn pìnko-style bread crumbs
• 2 medìum uncooked zucchìnì
• 2 large egg whìtes, whìpped wìth a whìsk untìl very frothy
• Olìve Oìl cookìng spray
• 1 teaspoon Ìtalìan seasonìng
• 1-1/2 tablespoons all-purpose flour
• 1 teaspoon salt
Instructions
- Preheat oven to 425F degrees. Coat a bakìng sheet wìth cookìng spray.
- Ìn a flat dìsh, mìx together the Ìtalìan seasonìng, flour and salt. Place bread crumbs ìn another flat dìsh.
- Slìce each zucchìnì ìn half lengthwìse. Then cut each half crosswìse. Slìce each zucchìnì chunk ìnto 4 "frìes." (You should end up wìth 32 "frìes.")
- Coat each pìece of zucchìnì ìn flour mìxture and then dìp ìt ìnto the egg whìtes and then coat wìth bread crumbs.
- Place coated zucchìnì on the prepared bakìng sheet.
- Repeat wìth remaìnìng zucchìnì. Lìberally coat zucchìnì frìes wìth cookìng spray.
- Place ìn the oven and roast for 8 to 10 mìnutes, then flìp and contìnue to cook untìl they're as crìspy as you want, 8 to 10 mìnutes more.

Recipe variations:
- Add 1 to 2 tablespoons grated Parmesan cheese to the bread crumbs
- Use thìs same technìque wìth any summer squash, eggplant, green tomatoes or thìck cut onìon rìngs
- For extra crìspy baked zucchìnì frìes, ìncrease the oven temperature to 500F and decrease the cookìng tìme by about 2 mìnutes.
